Gram flour (Besan) β 1 cup
All-purpose flour (Maida) β 1 cup
Ghee β Β½ cup
Sugar β 1 Β½ cups1
Water β ΒΎ cup
Cardamom powder β Β½ tsp
Chopped pistachios and almonds β 2 tbsp (for garnish)

Step 1: Roast the flours
- Heat ghee in a heavy-bottomed pan on low flame.
- Add gram flour and Maida.
- Roast on low flame, stirring continuously, until it turns light golden and gives a nutty aroma.
- Once roasted, set aside to cool slightly.
Step 2: Make the sugar syrup
- In another pan, add sugar and water.
- Heat it until it reaches a two-thread consistency (a little thick and sticky between fingers).
- Add cardamom powder to the syrup.
Step 3: Combine syrup and flour mixture
- Pour the hot sugar syrup slowly into the roasted flour mixture.
- Mix quickly and continuously in one direction until it becomes thick and starts to crystallize slightly.
- Spread this mixture immediately onto a greased tray.
Step 4: Shape and garnish
- Flatten the mixture evenly with a rolling pin or the back of a spoon.
- Sprinkle chopped almonds and pistachios on top.
- Let it cool for a few minutes, then cut into square or diamond pieces while still warm.
Step 5: Cool and store
- Allow it to cool completely.
- Store in an airtight container at room temperature.
