Step 2: Make the sugar syrup

  1. In another pan, add sugar and water.
  2. Heat it until it reaches a two-thread consistency (a little thick and sticky between fingers).
  3. Add cardamom powder to the syrup.

Step 3: Combine syrup and flour mixture

  1. Pour the hot sugar syrup slowly into the roasted flour mixture.
  2. Mix quickly and continuously in one direction until it becomes thick and starts to crystallize slightly.
  3. Spread this mixture immediately onto a greased tray.

Step 4: Shape and garnish

  1. Flatten the mixture evenly with a rolling pin or the back of a spoon.
  2. Sprinkle chopped almonds and pistachios on top.
  3. Let it cool for a few minutes, then cut into square or diamond pieces while still warm.

Step 5: Cool and store

  • Allow it to cool completely.
  • Store in an airtight container at room temperature.
